COVID-19 and the Coronavirus has affected us all in some way. We decided to try to stay connected to one another in heart and while social distancing sharing what we are doing during these times. So, we are passing the tennis ball around the world to each of our tennis player friends and others to check in on them. Stay safe tennis ball, and stay safe all of you! Brittany Collens Meatloaf Recipe

INGREDIENTS
2 tablespoons of salted butter
1/2 cup of chopped onions
1 1/2 pounds of lean ground beef (85 percent)
Ritz crackers or Saltines 1 sleeve
1 1/2 cups of cheddar cheese
2 eggs beaten
1/2 cup tomato sauce
1 teaspoon Worcestershire sauce
1 1/2 teaspoons of salt
1/4 teaspoons of black pepper
4 tablespoon Ketchup
A pinch of garlic powder

Directions
Preheat the oven to 350F. In a medium skillet melt the butter on medium-low heat and add in the onion to sauté until translucent (should be about 5 min) Remove onions and let cool. 
In a large bowl combine meat, onion, mashed crackers, cheddar, eggs, Worcestershire sauce, salt and pepper and 2 tablespoons of ketchup. Use your hands to gently mix ingredients until well blended. Important not to overdo it.
Form the mixture into a rough 6-inch by 9-inch loaf and put it on a large baking pan. 
Drizzle and brush the other 2 tablespoons of ketchup ontop of the loaf. Bake until firm and an internal thermometer should read 175F. 
This should be about 1 hour. 
Let cool for 10 minutes before serving.
